CSS in a single file or separate files?

Just a little design issue. I tend to keep all my CSS for a website a single large file and attach it to every single page. Am I better off keeping things in separate files so I can only join when needed? For example, having a forms.css being attached to pages only with the form properties, rather than keeping the form code within a large CSS file and have attached to each page. Obviously, I want to optimize the performance, I just wonder if it makes a difference to use separate CSS files for different things so that certain charges CSS code will not be attached when it is not necessary.
